What is Taxonomy?

Taxonomy is the science for classifying content. When you add a node that has taxonomy functionally you will be able to tag it with keywords. For example if you are publishing an article on the benefits of eating raw food you can tag that article with "raw food".  You can then have a list view of all your articles that are tagged with "raw food". That list can show in the sidebar of all products that are raw food. Taxonomy vocabularies can have parent and and child vocabularies. Inside the the vocabularies are the terms (tags).
